Salmon & Bell Peppers for Two
Ingredients:
- 1 Salmon Fillet, fresh or frozen
- 4 tbsp. Olive Oil
- 2 to 3 Bell peppers (green, red, yellow, or orange)
- 1 Large onion (Walla Walla, sweet, or yellow onion)
- Seasonings to taste:
-Garlic salt
-Pepper
-Basil - Lemon juice
- 2 tbsp. Butter
Directions:
- Set your burner at medium heat and add olive oil to a 10 inch skillet.
- Begin chopping your peppers and onions.
- Place the salmon in your skillet and add the chopped veggies.
- Sauté veggies with the salmon as it cooks.
- Add seasonings to the fish (don’t overpower the fish’s flavor).
- Squeeze a few drops of lemon juice on each fillet.
- If salmon was fresh it should take 15-20 minutes to cook.
- If salmon was frozen it should take approximately 25 minutes.
- Cook salmon until it appears to be a solid pink-white color. To test if it’s done, carefully take a fork and poke the middle of it, giving it a little twist. The fish should flake apart. It is not done if it has a translucent color and a spongy texture.
Serve with butter & herb rice or a side salad. Enjoy!
